Update uv.lock and version

This PR:

• Updates the uv.lock to include dependabot upgrades from PR Bump notebook from 7.5.5 to 7.5.6 #1118, PR Bump jupyterlab from 4.5.6 to 4.5.7 #1119, PR Bump jupyter-server from 2.17.0 to 2.18.0 #1120, and PR Bump mistune from 3.2.0 to 3.2.1 #1121, as well as some other package upgrades that were available.
• Upgrades the version in pyproject.toml and __init__.py.
